OK....ALL FOODIES AND ENTHUSIASTS.......THIS IS A FABULOUS RECIPE.I LEARNS  FROM A LADY IN PHUKET .SHE RUNS A COOKING SCHOOL AND HER RECIPES ARE AS AS AUTHENTIC AS THEY GET...ITS DELICIOUS..ITS LIGHT AND ITS BEAUTIFUL TO LOOK AT,DO TRY IT OUT.YOU COULD SUBSTITUTE THE SUGAR WITH SPLENDA AND MAKE IT AN ABSOLUTELY LOW FAT FISH..EAT ,,ENJOY N KEEP LOSING WEIGHT...I RATE IT 10/10

STEAMED FISH IN CHILLI LIME SAUCE

INGREDIENTS
1)2 LARGE FILLETS BASA FISH OR ANY OTHER WHITE FISH WASHED IN LEMON JUICE.
2)1/2 CUP LEMON JUICE
2)2TABLESPOON FISH SAUCE
3)1/2 TSP CASTOR SUGAR
4)2 TABLESPOON CHOPPED GARLIC
5)11/2 TSP FINELY CHOPPED AND DE SEEDED RED AND GREEN CHILLIES
6)1TSP CORIANDER ROOT CHOPPED
METHOD
1)MIX THE LEMON JUICE,FISH SAUCE AND CASTOR SUGAR
2)ADD THE RED AND GREEN CHILLIES,GARLIC AND CORIANDER ROOT TO LEMON JUICE MIX
3)TASTE.IT SHOULD HAVE A SOUR SWEET AND SPICY TASTE.
4)NOW STEAM THE FISH UNTIL TOOTHPICK INSERTED IN COMES OUT VERY EASILY.THROW THE WATER THE FISH LEAVES AWAY.
5)PUT IN A DISH AND POUR ROOM TEMP LEMON JUICE SAUCE OVER THE FISH.
6)DECORATE WITH LIME SLICES .....ENJOY!!!!!!!

THIS IS AN AMAZING DISH AND I LEARNT IT FROM THE CHEF AT THE BRIZA HOTEL IN KOHSAMUI..(THAILAND)...... ITS SPICY ..ITS FULL OF FLAVOUR AND FRAGRANCE  I THINK YOU LL JUST LOVE IT....... I WOULD RATE THIS DISH 9/10........ENJOY THE RECIPE..

THAI CHICKEN WITH BASIL LEAVES AND CHILLIES

INGREDIENTS

250 GM MINCED CHICKEN
3 GREEN CHILLIES
6-7 CLOVES GARLIC
4 TABLESPOON OYESTER SAUCE
2 TABLESPOON FISH SAUCE
1/2 TEASPOON HPD  CASTOR SUGAR
1 BIG BOWL OF FRESH BASIL LEAVES
METHOD
CRUSH GARLIC AND CHILLIES TOGETHER WITH MORTAR AND PESTLE
HEAT 2 TABLESPOON OIL AND WHEN HOT,ADD THE CHILLI GARLIC MIX
LET THE FRAGRANCE RELEASE.NOW ADD ALL YOUR CHICKEN AND COOK
ADD THE OYSTER SAUCE,FISH SAUCE AND SUGAR COOK.TASTE FOR SALT
NOW ..FINALLY ADD THE BASIL LEAVE.STIR TEN SECONDS.TURN GAS OFF
SERVE WITH RICE OR IN SMALL CABBAGE CUPS AS A SNACK.........TI:INCASE YOU NEED MORE GRAVY AND WOULD LIKE TO EAT WITH RICE,JUST ADD A LITTLE WATER........
